I decided to jump on the cottage cheese trend to add some more protein in my diet and thought the abundance of fall apples would pair really well. I do know that cottage cheese can be polarizing and you either love it or hate it. Over the last few years I have gone through phases with it, but I have always enjoyed the small curd or whipped version made by Friendship. I will mention only Peter likes cottage cheese and unless it is blended or baked into something, neither Savanna or John like it. For me this has been are a great fall protein packed breakfast, snack or light lunch.

Adaptations:

  • Replace the apples with pears or peaches in the summer
  • Cook your apples (will take a little more time but you could do it in bulk)
  • Use 1/4 cup of your favorite granola instead of a nut and seed mix
  • Use an apple spice blend instead of cinnamon

Apple Cinnamon Cottage Cheese Bowl

Ingredients

  • 1/2 cup cottage cheese (I prefer small curd or Friendship whipped)
  • 1 small or 1/2 of medium apple
  • 1/2 tsp cinnamon
  • 1/4 cup seed/nut blend or granola

Directions

  1. Dice your apple up into small pieces (about 1/4 inch).
  2. Toss the apples with cinnamon in a bowl (or bottom of a jar)
  3. Add cottage cheese and seed/nut mix to the bowl/jar.
  4. Take for a busy day or enjoy right away!
