We had extra leftovers so I didn’t get to try the stir fry so that is first up this week. I am leaning on some of my go to sheet pan recipes for make / prep ahead meals.

Day 1: Short-cut Meal: Soyaki Chicken Stir Fry using Trader Joe’s pre-cut asian vegetables and Soyaki sauce and chicken serving over brown rice or rice noodles
Note: This is a new recipe I am trying to create and haven’t quite nailed it yet
Day 2: Sheet Pan Gnocchi with Chicken Sausage and Veggies
Day 3: Easy Sheet Pan Steak Fajitas Dinner with Veggies
Day 4: Sheet Pan Turkey Zucchini Meatballs with Pumpkin and Bat Ravioli from Costco serve with your favorite sauce (Marinara, Pesto or Brown Butter).
Note: You can make the meatballs in advance and pop them in your slow cooker to be ready when you walk in the door.
