Hi – We had spring break and Easter so I took a break from planned cooking, but we are back to a routine this week. It is going to be rainy and chilly so I am leaning on some comfort foods.

Day 1: Tex Mex Tater Puff Ground Turkey Bake
Note the recipe is on the back of the 365 bag – I modified it by using ground chicken and about 1/2 of the enchilada sauce. It was really good my children loved it. The recipe linked here is similar or you can view the bag here.
Day 2: Slow Cooker Lentil Soup with grilled cheese
Day 3: Greek Chicken Bowls
Note: I may make the chicken in the air fryer instead of the grill this week depending on what day we make this.
Day 4: Slow Cooker Short Ribs over Pasta
