Pumpkin Pie Crumble Bars have all of the delicious flavors of pumpkin pie, but lightened up and served in a fun easy to eat bar.  They are loaded with rolled oats, pumpkin and spices and we love these as a healthy fall afternoon snack or treat.  They would also be perfect for a brunch.

How to Make Healthy Pumpkin Pie Crumble Bars

This recipe could not be any easier just mix one batch of dough for the crust and the topping, and whisk together the filling ingredients!  

  1. Set out your ingredients

2. Mix your dry crumble ingredients in a bowl and then add in your wet ingredients until a dough forms.

3. Press 2 cups of your dough into the bottom of a greased or parchment lined pan.

4. Bake the bottom crust for 12 minutes. While it is baking, whisk your filling ingredients in a small bowl. When the bottom is done cooking add the filling on top and spread evenly.

5. Crumble the remaining topping on top and bake for 25 minutes.

6. Let cool, cut & enjoy!

Healthy Pumpkin Pie Crumble Bars

Yield: 24 bars

Crust and Topping Ingredients:

  • 1 ½ cups whole wheat flour or a 1-1 gluten free flour blend
  • 1 ½ cups old-fashioned oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup maple syrup
  • ½ cup melted butter or coconut oil
  • Filling Ingredients:

  • 1 can (15oz) pumpkin puree
  • 2 eggs
  • ½ cup brown sugar
  • 1 ½ tablespoon pumpkin pie spice
  • Instructions:

  • Preheat oven to 350°F. Coat a 13×9-inch-square baking pan with cooking spray (I prefer an avocado one) or parchment paper
  • Combine flour, oats, baking powder, baking soda, salt, and cinnamon in a large bowl. Pour in melted and maple syrup and mix together until it becomes a dough / coarse crumbs form.
  • Press 2 cups of the oat mixture (3/4 of the mixture) into the prepared pan.
  • Bake for 12 minutes.
  • While the crust is baking prepare the filling by whisking all of remaining ingredients (pumpkin puree, eggs, brown sugar, and pumpkin pie spice) in a small bowl.
  • When the crust is done baking spread the filling mixture over the top in an even layer (be careful with the hot pan).
  • Next, sprinkle the remaining crumb mixture evenly over the filling.
  • Bake until the top is golden brown, 25 minutes
  • Cool completely on a wire rack (at least 30 minutes before cutting)
