Chocolate Peanut Butter Oat Bites – No Bake!

These Chocolate Peanut Butter Oat Bites are a family favorite that is simple to make, delicious and nutritious!

They come together with 7 ingredients or less and make a great no bake afternoon snack or healthy treat. Make sure to check out all of my notes and tips below.

How to Make Chocolate Peanut Butter Oat Bites

  1. Set out your ingredients

2. In a medium microwave safe bowl combine the honey and the nut butter and cook for 30 seconds – 1 minute and then mix until well combined.

3. Add the nut butter and honey mixture to your oats and oat flour and mix until throughly combined (I use my hands to get it fully incorporated).  It should look and feel like cookie dough.  

4. Using a small cookie scoop or 1 tablespoon, portion dough into mini silicone muffin molds (silicone ice cube trays work as well). If using the mini muffin tray they will be about 3/4 full if using the ice cube tray they will be about 1/2 full.  Press the dough down so compact and flat.

5. Next, put your chocolate and coconut oil into a small glass bowl that can be placed in the microwave.  Microwave on high for 1 minute, take out and stir until there are no chunks and it is smooth. If it is not smooth, microwave in 10-20 second intervals.

6. Next, portion about 1 tsp of melted chocolate on top of each bite.

7. Finally, freeze for 1 hour until firm.

Tips for Chocolate Peanut Butter Oat Bites

  • Nut Butter:
    • You can use natural or “skippy” peanut butter for this recipe.  I usually use a combination.  If you use only natural it will be a little less sweet. 
    • I usually use a combination of peanut and almond butter, but feel free to use just one or your favorite combination.  You can use SunButter for a nut free version. 
  • Silicone Molds – if you don’t have any you can make the bites in a 9×9 (thicker bar) or 13×9 pan lined with parchment paper.  Once firm cut into squares.  I find the cutting messy which is why I prefer the molds.

Yield: 36-40 bites

Ingredients:

  • 2 cups oat flour
  • 1 cup rolled oats
  • 2 tbsp hemp seeds (optional)
  • 1 cup nut butter (see note 1 below)
  • 1/2 cup honey
  • 10-12 ounces semi-sweet or dark chocolate
  • 1 tbsp coconut oil

Instructions:

  1. In a medium microwave safe bowl combine the honey and nut butter and cook for 30 seconds – 1 minute and then mix until well combined.
  2. Add the nut butter and honey mixture to your oats and oat flour and mix until throughly combined (I use my hands to get it fully incorporated). It should look and feel like cookie dough.
  3. Using a small cookie scoop or a tablespoon, portion dough into mini silicone muffin molds (silicone ice cube trays work as well). See note below if you do not have silicone molds. If using the mini muffin tray they will be about 3/4 full. If using the ice cube tray they will be about 1/2 full.

  6. Microwave on high for 1 minute, take out and stir until there are no chunks and it is smooth. If it is not smooth, microwave in 10-20 second intervals. You can burn your chocolate so be careful to do it in short increments. Every microwave is different but it took mine 1 minute + 20 seconds.
  7. Next, portion about 1 tsp of melted chocolate on top of each bite.
  8. Finally, freeze for 1 hour until firm. Keep in an airtight container in the refrigerator or freezer (we find the freezer keeps them a little too hard, so if you do prefer to keep them there, let them sit out for 1-2 minutes before enjoying).
