Who would not want to celebrate July 4th with a Healthy American Flag Fruit Pizza!! My children will be consuming A LOT of sugary treats at the beach for the 4th of July celebration so we did not need any more around our house, but I wanted to make something festive and fun for us. I adapted my favorite sugar cookie by using oat flour in place of the all-purpose flour to make it gluten free, cut the sugar and used avocado oil instead of butter for a healthy fat. Instead of the traditional whip cream and powdered sugar, I lightly sweetened greek yogurt with honey. My kiddos had lot of fun developing and eating this, I hope yours do as well and enjoy the 4th!
Ingredients
Gluten Free Crust
- 2/3 cup avocado oil
- ½ cup raw sugar
- 1 large eggs
- 1 tbs vanilla
- 1 tsp baking powder
- 1/4 teaspoon salt
- 3 cups oat flour
Topping
- 12-14 oz 2% Greek Yogurt
- 2-3 tbs Maple Syrup or Honey you can use more if you want it sweeter
- 1 pint raspberries cut in half
- ½ pint of blueberries
Instructions
To Make the Crust
- Preheat the oven to 350 degrees and line a 9×13-inch baking pan (I used a quarter sheet pawith parchment paper and lightly grease
- In a large bowl or electric stand mixer blend together the oil, sugar, eggs and vanilla
- Blend in the baking powder and salt
- Slowly add in the flour 1 cup at a time on a low speed or by hand
- Blend together until the dough begins to pull into a ball and is not too sticky (if it is too sticky add a little more flour 1 tbs at a time)
- Press mixture into the bottom of the pan
- Bake the crust for 10 -12 minutes until it is golden brown
- Let cool completely before putting on the topping
To Make the Filling
- Remove the crust from the pan and place on the platter you would like to serve it on
- Whisk together greek yogurt and honey and evenly spread the filling over the top of the crust
To Make Your Flag!
- Line the blueberries in the top left corner (I did 7 across and 5 blueberries down)
- Make your stripes – I did 6 rows of raspberries
- Chill in the fridge for 30 minutes before serving (or until you are ready to serve)
