This easy Banana Bread Pancakes Recipe was developed because we love to make home-made Banana Bread and Pancakes. Both are staples around here so this week we thought it would be fun to combine the two.  We loved the combination and hope you do too!

Ingredients

  • 1 mashed banana
  • 1 tbsp real maple syrup and more if you like for drizzling
  • 1 egg
  • 1 tsp vanilla
  • ¾ cup unsweetened almond milk or milk of choice
  • 3/4 cup whole wheat flour
  • ½ cup all purpose flour
  • 1 tbsp flaxseed meal
  • 1 1/2 tbsp baking powder
  • 1 tsp cinnamon optional

Instructions

  • In a bowl measure the flours, baking powder, flax and cinnamon and whisk together
  • In separate bowl (or I like to use a liquid measuring cupeel and mash the banana and then add the milk, maple syrup, egg and vanilla
  • Add the wet ingredients to the dry ingredients, whisk until all incorporated (it will be slightly lumpy)
  • Spray or use a little oil on a flat pan or griddle that is heated over low to medium heat
  • Use a cupcake or ice-cream scoop to measure out batter onto pan
  • Let the pancakes cool until they start to bubble and edges are set and then flip with a spatula, cook until done (firm)
  • Repeat for the remainder of the batter
  • Serve with your favorite toppings (maple syrup, butter, cinnamon, fruit, etc…)
