As we are reaching the midway through the fall I thought it would be helpful to share some new lunch ideas. These Kid Friendly Lunchbox Salads for school or home are easy to pack and adaptable to your children’s preferences. I love these 3 ideas because when I prep / chop the ingredients for their lunches I prep for myself to have the same lunch. Additionally, these are not all traditional salads with lettuce as I know not all kids like lettuce. I have one that still doesn’t.
Salad #1
This salad is based off of this recipe that we love and I make for myself once all of the ingredients are chopped.
- Not all kids love lettuce and a “salad” does not have to include it!
- Feel free to use any cracker/snack food here.
- A tortilla chip would work well and we love these that are gluten free.
- I send this with a spoon and fork.
- I turn the avocado upside down and put a little saran wrap on it but it does get a little brown. This works for some of my children but not all.
Salad #2
This is similar to a simple romaine salad we usually have about once a week. You can get creative and make it into a deconstructed chopped rainbow salad as well.
- Use your child’s favorite lettuce (my kids like romaine best).
- Mozzarella Balls are shown but cheddar or any cheese works here.
- My kids love ranch the best and like to dip the leaves in the ranch (here is my homemade yogurt ranch recipe) but feel free to swap with your favorite dressing.
- I added sunflower seeds for extra protein but you can do pumpkin seeds or nuts. Or add an energy bite or hardboiled egg!
