School Safe Nutrient Dense Granola

Taking a break from zucchini to share this school safe granola with you because we have been gobbling it up non-stop! It is packed with omegas and antioxidants from the pumpkin seed butter, flax & hemp seeds.  These seeds also add protein and an overall nutrient boost!  I decided to use @88acres pumpkin seed butter for the pumpkin seed health benefits and as something unique and different.

This recipe is incredibly versatile – I think our favorite way to eat this granola is straight off the pan, but I wanted to share with you all of the ways we have been eating it!

School Safe Nutrient Dense Granola

Nut Free Chunky Cinnamon Granola

Ingredients

  • 2 cups rolled oats
  • 2 tbsp (1/8 cup) ground flax seed
  • 1 tbsp hemp seeds
  • 1-2 tbsp cinnamon
  • 1/3 cup apple sauce
  • ¼ cup pumpkin seed butter or sunbutter see notes
  • 3 TBS honey or maple syrup
  • 2 tbsp pumpkin seeds optional

Instructions

  • Preheat oven to 325
  • Mix together all of the dry ingredients - oats, cinnamon, hemp seeds and flax
  • Add in the wet ingredients - honey, apple sauce and pumpkin seed butter
  • Mix thoroughly until it all comes together
  • Spread out onto a lined baking sheet
  • Bake for 15 minutes
  • Take it out of the oven to stir it around and rotate pan
  • Cook for an additional 10 minutes
  • Let cool for 10 minutes before eating and/or a half hour before storing

Notes

1. This can be made with any seed butter to make it school safe I just liked adding the pumpkin seed butter as something unique - I have even made it with tahini
2. If you are not making it for school you can make with a nut butter as well!
3. 2 TBS of Cinnamon makes this extra cinnamony! If you are not a crazy cinnamon fan I would only do 1 TBS
