This Watermelon Arugula Salad with Feta and Cucumbers is the perfect refreshing easy summer salad for everyone in your family.  This recipe was inspired by a good friend / old teammate and awesome runner who also has a fun family website that has easy recipes and a lot of fun kid/toddler activities.  You can check out Sarah at Multiples and Miles.

I love this salad because it has very little prep time and has a variety of uses!

How I serve this Watermelon Arugula Salad with Feta and Cucumbers

  • The components can be prepped ahead time if taking this to a BBQ, picnic, entertaining at your house, or just as meal prep for a busy night.  When you are ready to serve you have 2 options:
    • Add all the components to a bowl sprinkle with salt and then dressing toss to combine or
    • Leave the components separate so guests / children can take what they want
  • When I serve to kids I like to present it separate because many do not like arugula.  Which is how I do it as a weeknight side.   My children like the watermelon, feta and cucumbers and then I mix it all together for my husband and I (Note: I usually need 1 less cup arugula when I do I separate out components for my children).
  • When I serve it for lunch for my kids – I usually add sunflower seeds
  • Add sunflower seeds either way for a fun crunch!

Watermelon Arugula Salad with Feta & Cucumbers

Ingredients

  • 3 cups seedless watermelon cut into cubes (1-2 inches)
  • 1 cup english cucumber peeled and chopped (half moons)
  • 3-4 oz about 3 cups cup baby arugula *about 2 cups when serving as a family deconstructed version
  • 1 cup feta cheese cut into 1 inch pieces or crumbled
  • 1/4 - 1/2 tsp salt optional
  • 2 tbsp roasted sunflower seeds optional (it adds a nice crunch if you have and my children like them on their deconstructed plates)
  • Dressing: balsamic glaze, favorite balsamic dressing or 1 tbsp olive oil oil + 1 tbsp vinegar of choice

Instructions

Combined Instructions:

  • Peel and chop your cucumber and cut your watermelon and feta (if not using crumbled) into cubes
  • In a large bowl add the Arugula, watermelon, cucumber and feta and sprinkle with salt (1/4 - 1/2 tsp)
  • Add dressing and toss until fully combined

Deconstructed Instructions:

  • Peel and chop your cucumber and cut your watermelon and feta (if not using crumbled) into cubes
  • Add your arugula to a large bowl and your remaining components in separate bowls
  • Serve with dressing and allow guests / family members to create their own

Notes

  1. This serves 2-3 people as large lunch salads
  2.
