Hope you are enjoying the holiday weekend! Leaning on a double batch of taco meat from last week and another slow cooker meal for busy nights this week. I have 2 new recipes and 2 trusted ones, as always I will report back on the new ones so check back!
Day 1: Slow Cooker Ground Taco Meat for tacos or nachos with salads & corn
Note: I doubled this last week to use as an easy email when we got home from skiing. If you are looking for a different slow cooker taco check out my slow cooker chili lime chicken.
Day 2: Slow Cooker Creamy Chicken & Gnocchi
Note: This is a new recipe. I am going to lighten this up a little and will most likely do shredded zucchini or broccoli instead of the Brussels. Update 1/20 – we enjoyed this and I would make again. I made a bunch of adaptations to make it easier and lighter so if you want to make feel free to contact me with my adjustments).
Day 3: Sheet Pan Mini Meatloaves with String Beans and Potatoes
Note: This is not my recipe but I have been making it for years and we love it. If you prefer it can be made with turkey chop meat. I usually use onion powder instead of chopping an onion.
Day 4: Meatless Meal: Sesame Noodles with Snow Peas & Carrots
Note: This is a new recipe we are trying and it will be our weekly family cooking recipe
Extras: Fluffy Yogurt Waffles & Sunbutter Cheerio Bars (you can do peanut butter or almond butter instead)
