Happy New Year! Hope you enjoyed the holidays. We had a wonderful holiday with friends and family and then a fun week skiing. It is now back to reality. Since we were away Sunday & Monday are holiday leftovers/clean out the fridge while we clean up the house. I am leaning on 2 slow cooker meals for a busy Tuesday and Wednesday of activities. We are going to kick off the week with some healthy green smoothies to reset after a week of fun eating!
Day 1: Meatless Meal: Slow Cooker Lentil Soup + Sourdough Loaf (also option to serve with rice or quinoa).
Day 2: Slow Cooker Meal: Lightened Up Sloppy Joes – serve with roasted sweet potatoes, frozen sweet potato fries, corn and/or simple salads
Note: This was a new recipe and everyone loved! I made a lot of adjustments to this and going to try and post soon with it all, but if you want to make please feel free to email me and ask.
Day 3: Sheet Pan Chicken Parmesan without the Breading & Broccoli with sourdough or pasta
Day 4: Shredded Chicken Tacos with leftover sides from Day 2
Note: These chicken tacos were awesome and I would highly recommend the recipe! We doubled it for our family and savanna said she could do all of it except for slicing the chicken (she didn’t want to slice the raw meat)
Note: This recipe is from a new cookbook Savanna received for Christmas and she wants to make them
Flex Meals: Naan Pizzas & Pesto Flatbreads (there is a similar recipe in a new cookbook Savanna received for Christmas). We happen to have leftover pesto from the holidays so going to make a variety of flatbreads with salads one night. This is also a good option for weekend/ski lunches.
Extras: Peanut Butter & Jelly Thumbprint Breakfast Cookies & Green Smoothies
