I have some more fun fall apple recipes as we still have an abundance of apples. Trying some new recipes as noted below and I will report back. The highlight this week is a 5 ingredient sheet pan gnocchi with sausage & veggies.

Day 1: Sheet Pan Gnocchi with Sausage and Veggies (I am using string beans or Brussel sprouts this week) – 5 Ingredient Meal!
Day 2: Short-cut Meal: Mediterranean Chicken Skewers Option 1: a sheet pan meal with string beans and potatoes, Optional 2: With boxed rice pilaf & favorite veggie or Option 3: grilled chicken caesar salads. See the post here for exact details of these ideas.
Day 3: Meatless Meal: Easy Butternut Squash Mac & Cheese or Butternut Squash Pasta with Crispy Chickpeas (Note: this is the first time I am trying this recipe)
Update 10/8 – we loved both of these recipes. I used light coconut milk instead of heavy cream in the Butternut Squash Pasta one.
Day 4: Slow Cooker Beef and Broccoli (Note: this is the first time I am trying this recipe)

Flex Meal or Weekend Lunch: Naan Pizzas & Caesar Salads
Treat: Apple Cider Baked Donuts (I don’t have a donut pan so going to do as mini muffins)
