Hope you are having good long weekend. I am going to capitalize on the day off and do some bulk prep cooking. I am making easy shredded chicken for 2 different meals this week and enough to put in the freezer for future meals. Check out the post here for all of my shredded chicken meal ideas. I am also going to make a bulk batch of meatballs so I have some for a busy night and a future meal.

Day 1: Bulk Shredded Chicken – Meal #1 Chicken Enchiladas with simple salads
Day 2: Meatless Meal: 30 min Veggie Lo Mein
Note: I have made this recipe before and we all really enjoy it!
Day 3: Make ahead Turkey Zucchini Meatballs with Pasta and a Veggie Loaded Sauce
Notes: 1. I am going to put the sauce & meatballs in the slow cooker and make ahead the pasta for an easy walk in the door meal when I am out from 4-6:30. 2. While I am doing the work I am going to double the meatballs to have some in the freezer for future use. I have not found a frozen one we absolutely love. 3. You can do this with Raos 🙂
Day 4: Shredded Chicken Meal #2 Chicken Potpie Skillet Pizza
Note: This is a new recipe I am trying – it says it only serves 4 so I will report back – may add a full cup of chicken and will serve with my fall harvest salad
Flex Meal or Weekend Lunch: Instant Pot or Slow Cooker Lentil Soup with sourdough
Treat: Pumpkin Nice Cream
Breakfast: Sheet Pan Pancakes
Snack: Homemade Cheese Crackers in Halloween Shapes
Note: Thought this would be a fun activity for the day off on Monday
