I have 2 staple recipes this week and two new ones we are trying. We are looking forward to our family cooking night and trying out the pesto meatballs from the kids cookbook. I will report back on how it is!
Day 1: Family Cooking Night & Pesto Meatballs and Pasta with salads or broccoli

Day 2: Slow Cooker Whole Chicken with Veggies (carrots, potatoes & green beans)
Day 3: Garlic Butter Fish & Orzo Parchment Packs (will do broccoli or a raw veggie on the side as not everyone loves asparagus).
This was a new recipe for us and I only made for Chris and I, it was delicious but unsure if my kids would enjoy.
Day 4: Sheet Pan Quesadillas – using chicken leftovers from day 2 and sautéed spinach and onions. Will serve with easy salads & corn.
Flex Meal: Costco Short-cut Meal: Sliced Steak, Sweet Potato Fries & Roasted Cauliflower or Frozen Veggie of Choice
Extras: Irish Soda Bread, Spinach Oatmeal Cookies, & Rainbow Sheet Pan Pancakes – using this as inspiration and my pancake mix
