It’s a big week here – my baby is turning 5! He has picked out the menu for his birthday, which will be everyones highlight this week. Chicken Enchiladas are also a big favorite here. Have a great week.

Note: I had extra defrosted chicken last week and made some shredded chicken and froze it which I will use in this recipe
Day 2: Meatless Meal: Veggie Lo Mein
Note: We love this recipe. We substitute snow peas for the peppers
Day 3: Sheet Pan Honey Garlic Chicken with broccoli and carrots
Note: This was good but not great
Day 4: Peter’s Choice Birthday Dinner: Grilled Skirt Steak, Pasta with Rao’s & Roasted Mixed Vegetables
Birthday Ice-Cream Cake: Chocolate Cake + Moose Tracks + Fudge
Flex Meal: Sesame Chicken Rice Salad
note this was a new recipe and was delicious! We made warm / room temperature not cold (I heated the chicken in a skillet)
Extras: Apple Chai Granola + Puff Pastry Chocolate Bundles for Peter’s Birthday Breakfast
Note: These were new recipes and both were delicious. I loved the granola, but actually substituted half the dried apples and nuts for oats because I love oats and still thought it was a great balance.
