We have out last full week of late swim meets so again I am leaning on my slow cooker for at least one meal (if we have leftovers it will make easy chicken quesadillas for another night). The other meals can either be made or prepped ahead for minimal time when we get home. The highlight of the week is the grilled skirt steak night for something everyone loves and I love how quick it cooks and that the salad can be made ahead.

Day 1: Garlic Grilled Skirt Steak with & Cucumber, Chickpea & Feta Salad & Trader Joe’s Air Fryer Hash Browns (someone recommended the steak and hash brown combination and I am curious what my kids will think – similar to tater tots in my opinion)
Day 2: Slow Cooker Chili Lime Tacos with a Tomato & Cucumber Salad
Day 3: Meatless Meal: Skinny Taste Black Bean, Roasted Sweet Potato & Black Bean Bowls
Notes: This will be a make ahead meal for us and we will eat it at room temperature and my children will mostly likely choose to eat only some components deconstructed)
Day 4: Sheet Pan Pesto Fish and Veggies (choose your favorite we will mostly do broccoli) serving with weekly sourdough loaf
Note: I will double the pesto and use for a pasta salad next week
