I am excited to try this new format for my Meal Plans and to have them all archived here on the blog for you! We have a short week with the 4th of July holiday and a lot of swim meets. I am leaning on my slow cooker (Day 1), meals that can be prepared ahead (Day 2 & Day 3) and convenience items like pre-cooked chicken sausages and rice. The highlight this week is my slow cooker ground beef tacos. I am going to make extra for a fun lunch or flexible dinner nachos.
Day 1: Slow Cooker Ground Beef Tacos with corn and salads
(Flex Meal: option to double this and use for a 2nd meal as sheet pan quesadillas or nachos!)
Day 2: Sheet Pan Balsamic & Rosemary Steak & Veggies (first image above)
Day 3: Ground Chicken Zucchini Meatballs with Speedy Wild Rice Salad (image below)
Day 4: Grilled Chicken Sausages & Peppers (adding string beans and serving with my weekly sourdough loaf).
Healthy Treat: Pinch of Yum Raspberry Bars
