While it is still warm and light out when I am cooking I am leaning on some grill recipes and salads this week. The highlight will be my garlic grilled skirt steak and I am using up my abundance of garden tomatoes in my summer pasta. Day 1: Summer Vegetable Gnocchi Salad (will deconstruct for kids)
Note: this was my flex meal that I carried over from last week
Day 2: Turkey Bacon & Avocado Salad with homemade pita chips
Day 3: Grilled Turkey Burgers with Spinach & Onion (will leave out for kids) with No Cook Summer Tomato Pasta (may add some broccoli)
Day 4: Grilled Garlic Skirt Steak with Fall Harvest Salad (my kids will eat this deconstructed) and toasted sourdough
Flex Meal: Nachos or Quesadillas with leftover taco meat (I still have leftover taco meat from last week I will use as a last minute dinner or for lunches)
Treat: Rice Cake Snickers Crispers (going to skip or use PB protein powder instead of caramel)
Snack or Fast Breakfast with Fruit: Homemade Granola Bars (school safe)
