We are headed apple picking this week so I have some fun extra apple recipes! I am also working on some Costco recipes for you so I am making the week easier with some shortcut items.

Day 1: Meatless Meal: Cheesy Black Bean Stuffed Potatoes & Sweet Potatoes
Note: I am loosely following the recipe linked above. I am going to do a combination of potatoes & sweet potatoes, cook them and then stuff them with a mixture of black beans and corn and then melt cheese on top and everyone can choose their toppings of choice (sour cream, avocado, cilantro etc…..)
Note 10/1: So this was 50/50 everyone loved the fillings and were actually excited by the idea but the potatoes were a little too big or I wish I had carved some potato out… I would make again but execute differently
Day 2: Sheet Pan Chicken Parmesan without the breading – serving broccoli & weekly sourdough loaf or pasta
Day 3: Easy shortcut burger night using AmyLu Burgers and serving with a roasted veggie (string beans or brussels) or can do pickles for a faster meal and fresh apples.
Day 4: Bare Crispy Chicken Salads – use your favorite fun bagged salad for an easy night! Here is the inspiration.
Note: Peter does not eat salads so he usually does raw carrots, cucumbers, avocados….
Treat: Healthy Apple Cake
Breakfast: Applesauce Bread or Muffins
Snack: Slow Cooker Applesauce
