Homemade Cheese Animal Crackers

Ingredients

  • 6 oz shredded cheddar cheese
  • 4 tbsp (2 ounces) unsalted butter
  • 1/4 - 1/2 tsp seasoning salt *
  • 3/4 cup flour of choice **

Instructions

  • Measure and gather all of your ingredients
  • Place all of the ingredients into a food processor and process until the ingredients come together to form a dough (have patience this takes about 1-2 minutes)
  • Once the dough has formed take it out of the food processor and wrap in saran wrap and mold together to form a disc.
  • Let the dough chill for 20-30 minutes.
  • While the dough is chilling set up your workspace (I like to roll on a piece of parchment to prevent sticking and for easier clean up), gather your cookie cutters of choice, rolling pin and line your sheet pans with parchment paper
  • Pre-heat your oven to 350
  • Take out your dough and cut your disc in half, place one half on your parchment paper and the other half back in the fridge until you are ready to use it.
  • Lightly flour your workspace and roll your dough to a 1/6 - 1/8 thickness (I like to use these rolling pins to make it easier).
  • Cut out desired cookie shapes and place on a parchment lined cookie sheet (you do not need to leave too much room for spreading)
  • Gather the scraps into a ball and re-roll and cut out until all the dough is done (including the 2nd half of your disc)
  • Bake for 10-12 minutes (until crispy and just browned at the edges). If you want crispier crackers bake them up to 15 minutes.
  • Let cool 5 -10 minutes before enjoying!
  • If you do not consume them all immediately store baked crackers in an airtight container at room temperature for up to 1 week.

Notes

*I used 1/4 tsp but if you like a very salty cracker you may want to use 1/2 tsp
** I tested these with whole wheat flour and an all purpose gluten free blend
Notes:
  1. If you make your dough the day before or hours ahead of time let it sit out for 20 minutes before rolling.
  2. You can also cut these into squares / whatever shape you desire!
  3. The quantity of crackers is based on how thick you roll them and what size cookie cutter you use.
  4. I used a variety of animal cookie cutters - these are the ones that have detailed designs on them.  If you use these you need to put a little bit of flour on them to prevent sticking.
