This super simple green soup is made with broccoli, spinach, onions, fennel and potatoes. It is super healthy yet creamy, comforting and delicious! I have one child who requests this soup on a weekly basis. I know it may not be for every family, but I love that most of us really enjoy this which is why I finally decided to share it.

You will need a large pot and an immersion blender, food processor or high speed blender to puree the soup. Since everything gets blended at the end the chopping is very easy and fast. Once everything is lightly chopped bring all the ingredients to a boil and let simmer until they are soft.

Then transfer the ingredients to a blender (or just use an immersion blender).

Blend until your preferred consistency (we prefer it blended completely).

My children prefer the soup with a generous amount of parmesan, I love it plain or with a light sprinkling of parmesan. Feel free to enjoy the soup alone or serve it with toasted bread.

Super Simple Green Soup
It is super healthy yet creamy, comforting and delicious! Yield: 4-6 servings- 1 white or yellow onion – sliced
- 1 fennel bulb – sliced
- 2 medium yellow or red potatoes roughly chopped (about 12oz) can substitute with cauliflower
- 12-14 oz (1 large head) broccoli – roughly chopped
- 2 large handfuls (2-3 oz spinach or 2-3 cups)
- 4 cups vegetable broth
- 1 – 1/2 tsp kosher salt to taste
- Options To Serve: parmesan cheese, coconut milk, cream and/or toasted nuts/seeds
Ingredients:
- Slice, roughly chop and measure your vegetables.
- Add all of the vegetables except for the spinach to a large sauce pan or dutch oven.
- Pour in vegetable broth and add 1 tsp of salt and stir to combine.
- Bring to a boil over medium heat and simmer until the vegetables are soft.
- Once the vegetables are soft stir in the spinach until it is wilted.
- Turn off the heat and blend until your desired consistency (we enjoy ours completely pureed). Taste and add more salt if desired.
- Serve plain or with your topping of choice (see above for suggestions) – enjoy!
