These Slow Cooker Sloppy Joes are super flavorful and the perfect comfort meal for busy weeknights, potlucks, or gatherings! They have become one of our favorite family meals. I love that they can be made lighter with turkey meat if you prefer and they are easily served to people who are gluten free or dairy free. When I make this I usually make enough for 2 nights. With the leftovers I put them in the freezer for a super easy meal or I make rice bowls or empanadas with store bought pizza dough.

There is a decent list of ingredients, but most of them are staples that you have stocked in your pantry. I like to make this easier by buying a pre-chopped mirepoix instead of chopping the onion, carrot and celery myself. You can find these at most grocery stores.

I have a multi-cooker so I do the sautéing and browning all in one pot. If you have a traditional slow cooker you need two pots. The first step is to sauté the celery, carrots and onions in 1 tablespoon of olive oil until lightly browned and the onion is translucent.

Next add the beef and spices and cook until the meat is lightly browned.

Add the remaining ingredients and stir until throughly combined. If you need to transfer the mixture to the slow cooker and then cook on low for 6-8 hours.

Finally serve with your favorite rolls and sides! I made a variety to show you but you can make this as simple as you want! See the recipe for my suggestions.
If you double the recipe you can freeze the extra for up to 3 months, make empanadas/calzones with store bought dough, make stuffed peppers or potatoes, or make fun rice bowls.

They are super flavorful and the perfect comfort meal for busy weeknights, potlucks, and gatherings! Make enough for two nights for a super easy second meal (see above for ideas)! Adapted from: Oh Sweet Basil Yield: 6-8 servings- 2 pounds ground turkey or lean ground beef (90-93%)
- 10oz mirepoix (or 1 heaping cup chopped onion, carrot & celery mixed not 1 cup of each)
- 1 tablespoon olive oil
- 2 tablespoons dijon mustard
- 2 tablespoons soy sauce
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 2 tablespoons brown sugar
- 1 cup tomato puree
- 1/4 cup apple cider vinegar
- english muffins or roll of choice
- corn
- sweet potatoes or regular potatoes
- string beans
- salads
- tater tots
- french fries
- pickles
