Hi – John requested Chili so that is on the menu this week along with some easy short cut meals for busy evenings. I have some spinach to use up so I will make a batch of my spinach pesto and spinach cookies this week as well!

Day 1: Slow Cooker Risotto (with peas) and leftover short ribs
Note this was the first time I tried the risotto, it was ok but a little sticky, I think it needs more broth and a little butter or oil. I am going to try again in a few weeks. I am going to fold in the peas at the end and leave them separate for my kids. If we didn’t have leftover short ribs I would pair this with an easy grilled meat (garlic and herb marinated chicken or pork or, garlic skirt steak).
Day 2: Slow Cooker Turkey Chili – will serve with the beans on the side, chips or rice, avocado & cucumbers
Day 3: Pesto Chicken Flatbreads – new recipe!
Day 4: Short Cut Burger Meal: Amy Lu Chicken Burgers or Veggie Burgers on English Muffins with Tater Tots and Salads
Note: I buy the burgers at Costco, but they also sell smaller quantities at Whole Foods. I have tried a lot and the Dr. Praegers are my favorite.
Extras: Spinach Oat Cookies
These are super green in their appearance but you don’t taste the spinach and it’s a fun way to get some extra greens in.
