These easy slow cooker meatballs are super flavorful and make the best sauce for the perfect comfort meal. It is the ideal meal for busy weeknights, potlucks, or gatherings!  You can serve them with pasta or as meatball subs for an easy family dinner. They can be made lighter with turkey chop meat if you prefer and they have adaptations for those who are gluten free.  When I am not making these for a gathering I usually make enough for 2 nights so I can freeze the extras.

I love how short the ingredient list is. You can make the whole meal with pasta or rolls and a bagged salad with 10 ingredients. Additionally, I sometimes prep the meatballs and put them in the pot 2 days before I need to cook them.

Tips and Adaptations for Slow Cooker Meatballs

  • I used 90-93% lean beef, but you could use turkey chop meat as well.
  • If you want to make these gluten free just use your favorite gluten free breadcrumbs (Jason or 4C are recommended).
  • Make ahead!! I love to prep meatballs ahead – you can do this 1-2 days before.
  • If you double the recipe you can freeze the extra for up to 3 months (or if you just have extra sauce it can be frozen).

Slow Cooker Meatballs

They are super flavorful and make the best sauce for the perfect comfort meal for busy weeknights, potlucks, and gatherings!

Yield: 5-7 servings

    Ingredients:

  • 2 pounds lean ground beef (90-93%) or ground turkey
  • 1 1/2 tsp salt
  • 3 garlic cloves minced (I use frozen cubes)
  • 2/3 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1-28 ounce can crushed tomatoes
  • 1-28 ounce jar of your favorite tomato sauce (I use Raos)

    Instructions:

    1. In a large mixing bowl add your chop meat, salt, parmesan cheese, bread crumbs, and eggs and mix until throughly combined (I find using my hands the best way).
    2. Next, form into meatballs (about 2 inches each – I use a large scoop). You should yield 20-24 meatballs.
    3. Add the meatballs to the bottom of your slow cooker pot and pour the can of crushed tomatoes and the jar of sauce over.
    4. Set your slow cooker on low for 5-8 hours and mix it about halfway into the cooking time if you can.
    5. Serve with your favorite pasta or rolls as heros or sliders – enjoy!
    6. Leftovers can be frozen up to 3 months
