Hi Friends! Today I wanted to share a fun fall vinaigrette as well as another use for all of your apples. I love adding apples to salads! This year I developed a cinnamon maple vinaigrette to go along with our favorite fall harvest salad that is filled with apples and butternut squash. This vinaigrette was inspired by naptimekitchen and would go well with almost all fall inspired salads. It works especially on hardier greens like kale and raw brussels sprouts.
I have been making this vinaigrette in bulk to use for a variety of salads and to have an easy homemade dressing on hand. The dressing makes enough for multiple servings. I usually use about 1/4 cup (about half of what I made) for 6-8 cups of spinach or 1- 2 tbsp for individual servings.
My fall harvest salad is great with leftover butternut squash for lunch or as an easy dinner side. Everyone doesn’t eat every component of this salad, but everyone enjoys 4 out of 5 ingredients which makes it a win!
Cinnamon Maple Fall Dressing
Ingredients:
1/4 cup olive oil
1/4 cup vinegar (apple cider, red wine or balsamic)
1 tsp cinn
1/2 tsp salt
1 tsp Dijon
1 -2 tbsp maple
Directions:
Measure all ingredients into a jar and shake until full combined. Use it all in one big salad or use for individual portions.
Store unused dressing in the refrigerator and take it out a few minutes before you would like to use. Shake well before using.
Yield: 6-8 servings
