We are eating more lunches together this year so I wanted to share 2 fun and different Mommy and Me Lunch Ideas that we have been making. The ingredients are mostly the same for the mommy and me sandwiches, you just construct them slightly different. We have been enjoying these 2 because
- They are different than just plain turkey or ham and cheese
- You don’t have to think about something else for yourself
- You are not taking out 1 million things for lunch
- They are packed with fruits, veggies and nutrients
- I serve both with a side a fruit and extra veggie if its easy
Veggie Hummus & Cheese
with grapes, cucumbers & avocado
Ingredients needed:
Hummus
Muenster suggested but any cheese works
Avocado
Cucumber
Baby Kale or Spinach or Romaine (only adults)
Toasted Multigrain Bread or Pita (or your favorite gluten free bread)
A. Kid Version:
Hummus & Cheese with cucumbers and avocado on the side. You can try and add the cucumber sliced thin, but my kids do not like it that way! Spread hummus (about 1/2 tbsp of hummus per side for younger kids so its not too messy), add the cheese and you are done! I cut it into bite size pieces for my toddler.
If you are packing it is also a fun change of pace!
B. Adult Version:
Spread hummus (about 1 tbsp per side) on both sides of toasted bread layer spinach on top so it sticks to the hummus. Next layer the cucumber (about 5 thin slices) on one half, then the cheese (2 slices) then the avocado (about 1/4 sliced). Finally top with the other spinach and hummus toast – enjoy!
Apple Butter & Cheddar
with sliced apples and cucumbers
Ingredients needed:
Apple Butter (I make sure to buy one without sugar added)
Cheddar suggested
Spinach (adults only)
Cucumber
Sliced Applaces
Toasted Multigrain Bread
A. Kid Version:
Apple butter & cheddar with cucumbers and apples on the side. You can try and add the cucumber or apples sliced thin, but my kids do not like it that way! Spread apple butter (about 1/2 tbsp per side for younger kids so its not too messy), add the cheese and you are done! I cut it into bite size pieces for my toddler.
B. Adult Version:
Spread apple butter (about 1 tbsp per side) on both sides of toasted bread layer spinach (small handful) on top so it sticks to the apple butter. Next layer the cucumber (about 5 thin slices) on one half, then the cheese (2 slices) then the apple slices (about 1/4 sliced thin). Finally top with the other half of apple butter and spinach toast – enjoy!
