Jack o’ Lantern Sheet Pan Quesadillas are a fun and easy way to get into the halloween spirit and will be a sure hit! They are cute for a kids halloween party (you could make small individual ones) but easy enough for a fun fall family lunch or dinner (see below for all ideas!).
How to Make Jack o’ Lantern Quesadillas
- Lay 2 round tortillas on top of each other
- Use a small sharp knife to cut out the stem
- Take the top layer off and reserve for the bottom of the quesadilla.
- Next use the knife to cut out the face : 2 triangular eyes, an upside down triangular nose and a spooky mouth
5. Place the bottoms on a sheet pan and fill with cheese
6. Optional add a layer of pumpkin purée on the bottom tortilla before adding the cheese

8.Option to add scraps to pan and spray quesadillas and scraps with cooking spray and sprinkle with salt
- Bake at 425 for 10 mins (scraps will be done at 5) – Enjoy!!
Adaptations and Ways to Serve
- Lunch: I just serve these alone with some avocado or guacamole and fruit or veggies
- Dinner:
- I paired ours with a spooky black bean soup, but you could make or buy your favorite soup to accompany it (see below).
- Make it a complete meal and add more protein with shredded chicken or black beans. Then serve with a simple salad or raw veggies and your done!
- Option to add pumpkin to the bottom layer for extra veggies and fall seasonal flavor
- I love pumpkin and sautéed onions.

For the spooky witch’s brew – I made eyes using sour cream and ketchup, cut up avocado and put in the toasted tortilla scraps. I used these cauldron’s but for smaller ones you can get this set.

Quesadillas
- 6 tortillas I used flour but any should work
- 2 1/4 cups shredded cheddar or Mexican cheese I put about 3/4 of a cup for an 8 inch tortilla
- cooking spray I use avocado or olive oil spray
- pinch of salt
- pumpkin puree optional - I use about 2 tbsp per tortilla so you will need about 1/3 - 1/2 cup if you are using all 3
Optional Serving Ideas
- black bean soup
- guacamole
- salsa
- shredded chicken filled inside
