
This Creamy Zucchini Almond Smoothie is a fun new alternative way to use zucchini and a great way for picky eaters to try it. It is filled fruits and veggies and the almond butter and flax seed add protein to keep you satisfied!
I would have never thought of putting zucchini in a smoothie if it wasn’t for Nap Time Kitchen – thank you for inspiring me! She makes a great Mocha Smoothie using zucchini – you need to try it (not for kids because it has caffeine). It works super well and it is a fun way to use or save your zucchini. Making smoothies with your zucchini is also a great when you have an overstock from your garden or you bought too much from the grocery store. You can just cut and slice it and bag it for future use.

It does not make the smoothie crazy green like spinach or kale so it can be snuck in there if you have a picky eater. You cannot really taste it either so really an all around great way to get some extra nutrients in. It has all of the essentials so I find this recipe great for an on the go breakfast when we are late to school or on busy weekend mornings filled with sports. You can pre-portion most of it so it is ready to go and save even more time. I usually double the recipe and we all have some.
Our Current Favorite Alternative Ways to Eat and Use Zucchini
As I have now mentioned many times – my children do not like zucchini sautéed, grilled or roasted, but they do not mind when I sneak it into other foods and I usually tell them because they know now that they do not mind it that way. They love zucchini bread, muffins, pancakes/waffles, meatballs (recipe coming soon) and now smoothies – check out this video of my son enjoying!

Kids are sometimes happier to try something new when they have helped make it. So enlist your kiddos to help pour the ingredients into the blender and they love to push the buttons and watch it swirl!
What is your family’s favorite way to eat zucchini?
Zucchini Apple Banana Almond Smoothie
- 1 frozen banana
- 1 apple
- 1 sliced zucchini
- 1 tbsp almond butter (or your favorite nut or see butter)
- 2 tbsp ground flax seed (optional)
- 1 1/2 cups unsweetened almond milk

Chop all ingredients and freeze on a parchment lined baking sheet or in a freezer bag.

When ready to make take out and let sit for 5 minutes.

Dump frozen banana, apple and zucchini into blender and then add remaining ingredients.
- Blend, Pour & Enjoy!
1. This can be made with any high-speed blender I tested it out with my vitamix and a nutri-bullet
2. If your zucchini or banana are not frozen you may need to add a handful – a cup of ice
3. You can pre-portion out the zucchini, banana and apple and freeze in bags to save you time on busy mornings
4. Most of the time my children share a 10oz smoothie with toast or a muffin etc…
