5 Easy Meals with Costco Mediterranean Grilled Chicken Strips

These Costco Mediterranean Grilled Chicken Strips are a great option to have for a quick and easy short cut meal.  I love that the ingredient list is short which makes them a good substitute when you are short on time.  Below are 5 easy meals you can make with them.  All of the ingredients can be found at Costco.  They are in order from super fast to a little more time.  All of these meals have no more than 10 minutes of hands on time and come together in 30 minutes or less.

Meal # 1 Grilled Chicken Caesar Salads

Ingredients:

  • Pre-Cooked Mediterranean Grilled Chicken Strips
  • Caesar Bagged Salad Kit

Optional to bulk up the meal:

  • Avocados
  • Tomatoes
  • Naan
  • Cucumbers

Instructions:

  1. Warm up chicken according to package instructions (you can even do in your toaster oven!).  It will take about 8 minutes.
  2. Assemble salad while chicken is warming up, add any extras that you may desire.
  3. Warm up naan if you want (can do with chicken)
  4. Serve and Enjoy!

Meal #2 – Easy Chicken Caesar Flatbreads

Ingredients:

  • Pre-Cooked Mediterranean Grilled Chicken Strips
  • Caesar Bagged Salad Kit
  • Shredded Mozzarella Cheese
  • Medium to Large Naan or Pitas

Optional to bulk up the meal:

  • Avocados
  • Tomatoes
  • Cucumbers

Meal # 3 Grilled Chicken & Rice Pilaf with Peas

Ingredients:

Optional to bulk up the meal:

  • 1/2 cup (or more to your liking) halved olives
  • Toasted pinenuts

Instructions:

  1. Make the rice according to package instructions (It will take 20-25 minutes).  Add the peas for the last 5-10 minutes.
  2. While the rice is cooking warm up chicken according to package instructions (you can even do in your toaster oven!).  It will take about 8 minutes.
  3. Option to take the chicken off the stick and mix in or just serve right on top.
  4. Add any extras if you desire, serve and enjoy!

Costco 3 Ingredient Mediterranean Grilled Chicken Rice & Peas - Photo

Meal # 4 Sheet Pan Grilled Chicken Skewers with Potatoes & Brussels Sprouts.

Ingredients:

  • Pre-Cooked Mediterranean Grilled Chicken Strips
  • 1 lb Mini Potatoes (the little potato company if buying at Costco)
  • 1 lb Brussels Sprouts
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions:

  1. Line a sheet pan with parchment for easy clean up and preheat the oven to 425.
  2. Clean and halve your potatoes.  Wash your Brussels sprouts, trim the ends and halve or quarter.
  3. Add the potatoes and Brussels to the sheet pan and toss with olive oil and salt.
  4. Cook for 20 minutes on the bottom rack, then add chicken and cook for an additional 8 minutes on the top rack.
  5. Serve and Enjoy!

Meal #2 – Greek Chicken Bowls

Ingredients:

  • Pre-Cooked Mediterranean Grilled Chicken Strips

  • Naan bread or pita chips
