Have you ever baked Feta before? Its delicious and has an entirely different flavor that I love – you have to try it!  There is nothing not to love about this dish it is a super easy and delicious vegetarian meal.  It was inspired by a similar @nytimes recipe! If you want more reasons to try it check out the many reasons why I love this meal:  

  • The base of this meal comes together with 5 ingredients or less
  • Super adaptable recipe to make with your families favorites
  • Great last minute recipe and you don’t have to remember to take anything out to thaw
  • Very minimal hands on time
  • It could be used as bulk lunches instead 
  • You can set this up early in the day when you have free time and cook it when you are ready to eat
  • Reheats well!  
    • It has worked well for a night when we have had waves of eating (tastes good at room temperature too!)

Sheet Pan Feta Optional Serving Suggestions:

Grains: farro, orzo quinoa or favorite small pasta 

Sauces: marinara, tahini, pesto 

Toasted Nuts: pine nuts, almonds or walnuts

Herbs: basil, cilantro or parsley

Ingredients

Feta & Veggies

  • 8 oz Feta block cut into 1 inch pieces
  • 2 1/4 lbs of mixed vegetables chopped broccoli, cauliflower, tomatoes, peppers, zucchini, Brussels sprouts, string beans etc
  • 3 tbsp olive oil
  • 1 tsp salt
  • Basil for serving - optional

Optional Serving Suggestions

  • 1 1/2 - 2 cups cooked grain: farro,orzo quinoa or favorite small pasta
  • 1/2 cup sauce for drizzling or dipping: marinara, tahini, pesto
  • 1/4 cup toasted nuts: pine nuts, almonds, walnts

Instructions

  • Preheat oven to 425 and line 1 rimmed sheet pan with parchment paper
  • In a large bowl mix together oil, salt and chopped veggies
  • Add your feta and mix until everything is throughly coated
  • Spread out onto sheet pan
  • Cook for 30-35 mins and rotate pan half way through the cooking time if you can
  • Serve over mixed greens or your favorite grain / pasta. Option to serve with sauces and topping suggestions!
