We have our 4th family cooking night this week! We are making chili and cornbread for some fun football watching food. I will do a round-up post of our first month of family cooking meals next week. The other kids highlight this week will be easy sheet pan nachos for a quick weeknight meal.

Day 1: Chili, Cornbread & Salads for football watching!
This is will be our family cooking night recipe! I have my own chili recipe that we love but we may test out this one from the new cookbook.

Day 2: Greek Sheet Pan Chicken & Veggies with Quinoa or Pitas. Note: This was a new recipe for us and it was great!
Day 3: Slow Cooker Honey Garlic Chicken – 5 Ingredients! Make it 6 and add your veggie right to your slow cooker – asparagus, zucchini, carrots, sugar snap peas etc. Serve with rice or cauliflower rice or rice pilaf.
Day 4: Meatless Meal: Sheet Pan Nachos with a Black Bean & Corn Salad
Family Birthday Dinner for Chris: Orecchiette with Sausage & Broccoli Rabe + Special Cake & Ice-cream
Extras: Gluten Free Oatmeal Almond Flour Muffins (I do not use any oil/butter and add more applesauce as well as 1 1/2 cups oat flour instead of 1 cup) & Banana Date Brownies (these can be a snack or healthy weeknight treat)
