After a great winter break we are getting back into the flow with a week of cooking and activities. I have 2 staple recipes this week and two new ones we are trying. We are looking forward to our family cooking night and trying out the rice and bean bowls from the kids cookbook. I will report back on how it is!
Day 1: Family Cooking Night & Meatless Meal: Rice & Bean Bowls with Avocado Sauce
This was great and we would make again. I think you can use frozen rice and do the corn, beans and rice together to make it easier. If you use pre-cooked rice use less liquid.
Day 2: Pork Carnitas with with Roasted Veggie (string beans) or Salads
Day 3: Cuban Picadillo (note: you can make one big batch of rice for Day 1 and 3 as meal prep).
Note: We loved this!!
Day 4: Sheet Pan Chicken Thighs & Veggies and Potatoes – One Pan Meal!
Flex Meal: Costco Short-cut Meal: Sliced Steak Sandwiches & Salads
Extras: Healthy Oatmeal Banana Snack/Breakfast Cookies (2-3 Ingredients!!)
