Hi! Hope you had a great Thanksgiving and long weekend with friends and family! I am back with a meal plan for a busy week of activities. We are excited to start our 12 holiday treats next weekend!

Day 1: Slow Cooker Red Wine Short Ribs over pasta and/or spaghetti squash and/or cauliflower puree with a big simple salad
Day 2: Meatless Meal: Roasted Vegetable & Black Bean Buddha Bowls with a lemon tahini sauce
Day 3: Slow Cooker Kid Friendly Chili with Corn Bread
Note: This is great on a night we are eating at different times
Day 4: Rosemary & Walnut Breaded Chicken serve with a big salad or roasted vegetables and weekly loaf
Flex Meal: Leftovers or Teriyaki Meatballs & Veggies (broccoli, string beans , peppers, onions…)
Note: this is a meal I am developing with Costco products
Baking 1: Holiday Treat #1 Lightened Up Ginger Molasses Cookies
Baking 2: Snack or on the go breakfast: Sweet Potato White Bean Bars
Breakfast Idea: Air Fryer Hash Browns and Scrambled Eggs & Fruit
