We had a fun spring break doing local adventures and eating on the run. I set a fun challenge for myself to clean out my fridge and some old freezer items and was able to go 2 weeks without food shopping. We ate some unique meals, but it is nice to have a fresh start this week. Have a great week.
Day 1: Grilled Yogurt Marinated Chicken, Grilled or Roasted Mixed Vegetables & Weekly Sourdough Loaf
Note: the recipe is for kebabs but I think I will do thin chicken breasts
Day 2: Air Fryer Chicken Milanese with Mediterranean Salad
Note: This was delicious and perfect for a night you have various eating times since you have to batch cook it for a family.
Day 3: Slow Cooker Ground Beef Tacos, Corn, Tomatoes & Cucumbers
Day 4: Easy Slow Cooker Orange Chicken serving with sugar snap peas & rice & cauliflower rice
Note: We have made this recipe before and really enjoy it!
Extras: Hard Boiled Egg Cherry Smoothie & Vegan Carrot Muffins (with lentils)
